Because Islam did not have a symbol yet, and they used solid flags to represent their religion (mainly black, green, and white), they decided to use the Crescent Moon and a Star. According to legend, the founder of the Ottoman Empire always dreamed of the crescent moon stretching from one end of the earth to the other. This is why the Ottoman Emperor approved of this symbol for the symbol of Islam.
